I have been busy since I arrived back home. Lots of stuff to attend to plus we got a visit from our friend, Eric who is from Hawaii. Good thing Odd and I managed to accomplish most of it and I already secured my seat at the film and media school.
And next week, we’re off to Fredrikstad (Odd’s home city) to visit his parents and attend a wedding in Oslo as well since it’s just an hour away. Hopefully, we can see the Gay Pride parade in Oslo while at it.
Anyway, here are some pictures and a recipe to go.
Ingredients:
Spinach leaves
6 large new potatoes
Grated cheese (I used a light Norwegian cheese on this one)
Olive oil
Salt
Pepper
Oregano
1. Wash the spinach leaves and the potatoes thoroughly. Set the spinach leaves aside.
2. Boil the potatoes with their skin on until they are cooked. (To check and see if the potatoes are done, carefully remove one from the water. Poke a fork through the potato. If it slides through easily, the potatoes are done. If not, wait a few more minutes and try again.)
3. Once the potatoes are done, take them out to dry then cut them into large chunks carefully as they break apart quite easily.
4. Place the potato chunks on a rectangular pyrex glass (if you don’t have that a deep baking pan will do). Distribute them evenly on the surface.
5. Once done, drizzle the potatoes with olive oil and sprinkle them with salt, pepper and oregano.
6. Top the potatoes with the spinach leaves then lastly the grated cheese.
7. Place inside the oven with a temperature of 200 degrees Celsius for 10 to 12 minutes.
Serves 5 to 6 persons.
That’s all.

You can never go wrong with potatoes. Cheese, spinach and potatoes – surely a winning combination.
I like the looks of this Chase. Have you tried spinach on salmon? Someone made it for me years ago and I really enjoyed it.

Hvis de velger å legge meg til likevel, så blir jeg liggende nederst på listen og den klatrer ikke på listen når jeg oppdaterer…

Det er bare på Petuniabloggen det er problemer – ABC bloggen legger seg fint inn på bloggrollen til folk. Så vidt jeg kan se, så er innstillingene på disse to bloggene identiske, men som sagt – jeg kan ha stirret meg blind.
Nå ha jeg skrevet hele kommentaren på norsk, selv om bloggene og de fleste andre kommentarene er på engelsk. Jeg håper det går greit. Jeg er like dårlig i engelsk som jeg er på data!!!

looks great! one of my favorite breakfasts is briefly stirfried spinach. you set it aside on a plate to keep warm, then fry an egg till the edges are crispy. The egg goes on top of the spinach, and it’s quite wonderful.
